Chacala food guide: from the sea to the grill

A table by the Pacific
Food is part of discovering Chacala. Fishing traditions meet the grill, citrus and freshly made tortillas in a coastal cuisine meant to be shared after a morning by the sea.
This guide draws on local material and original photographs supplied by Chacala Travel. Recipes, portions and availability vary by restaurant; ask for the day’s menu before ordering.

Zarandeado fish: the centre of the table
Opened, seasoned and cooked over coals on a grill, pescado zarandeado is a signature of Nayarit’s coastal cooking. Its smoky flavour pairs with lime, salsa and tortillas.
Mahi-mahi, snapper and snook are among the fish used, depending on availability. Ask about size, servings and whether the price is per fish or by weight.

Green aguachile: fresh and lively
Shrimp, lime, green chilli and cucumber form the base of many aguachile recipes. It is a citrusy, spicy choice for a warm day by the sea.
Heat levels vary. Ask before ordering and check the preparation if someone needs to avoid raw ingredients or has an allergy.
Fish ceviche
Fish ceviche is a coastal classic. A common local version uses sierra fish with lime, tomato, onion and coriander; recipes vary by restaurant.
Octopus and shrimp ceviche
Octopus and shrimp offer different textures. Ask what is available and consider sharing a portion if you want to taste several dishes.
Shrimp from the grill and other starters
Zarandeado shrimp skewers bring the flavour of the grill to an easy sharing dish. Check which sides and sauces are included.
The photo collection also features oysters with lime. The photos do not guarantee availability at every restaurant; ask about the day’s selection and preparation.

The sides matter too
Grilled fish and seafood often come with rice, salad, salsa, lime and handmade tortillas. Ask which accompaniments are included.
Ceviche and aguachile are served fresh with their own ingredients and sides; do not assume they include the hot sides served with zarandeado fish.
Choosing where to eat
Read the menu, ask what fish is available and confirm prices before ordering. If you travel with children, check portions, spice levels and suitable options.
